Introduction
Egg Tadka (or Anda Tadka) is a fierce Indian turn on fried eggs, where boiled or fried eggs are infected with the fragrant nature of spices, onions and herbs. This protein-rich dish pairs are completely with toast, paratha or rice.
Ingredients (Serves 2)
- 4 big eggs
- 1 medium onion (finely chopped)
- 1 tomato (finely chopped)
- 2 green chillies (slit)
- 1 teaspoon ginger-garlic paste
- ½ teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- ½ tsp cumin seeds
- 1 tablespoon oil or ghee
- Fresh coriander leaves (for garnish)
- salt to taste

Step-by-Step Instructions
Step 1: Prep the Eggs
Hit the egg in a bowl with a pinch of salt and turmeric. Alternatively, you can also use boiled eggs (half) instead of scraping.
Step 2: Prepare the Tadka (Tempering)
Heat oil or ghee in a pan. Add cumin and let them separate. Add chopped onion, green chillies and ginger-garlic paste. Until the onion becomes golden.
Step 3: Add Spices & Tomatoes
Stir in turmeric, red chili powder, and chopped tomatoes. Cook until the tomato softens and the oil is separated from the masala.
Step 4: Cook the Eggs
Pour the beaten egg into the pan. Stir continuously on low heat until the eggs are gently scummed and coated with spices. Sprinkle garam masala and garnish with coriander leaves.

- For additional smokness, use a charcoal "tune" technique.
- Change green chili with black pepper to a milky taste.
- Add a splash of milk to the egg to the cream texture.
