  • ½ tsp turmeric powder

  • 2 cups water
  • 1 tbsp ghee or oil
  • Salt to taste

Step 1: Make the Pepper-Cumin Powder
Dry roast black pepper and cumin seeds for 1–2 minutes on low flame until aromatic. Let them cool, then grind into a coarse powder.

Step 2: Prepare Tamarind Base
Squeeze the soaked tamarind to extract juice and mix it with 2 cups of water.

Step 3: Cook the Rasam
In a saucepan, add tamarind water, turmeric, chopped tomato, crushed garlic, and salt. Bring it to a gentle boil and simmer until the tomatoes soften.

Step 4: Add the Spice Mix
Stir in the freshly ground pepper-cumin powder. Let it simmer for just 5 minutes to keep the flavors intact.

Step 5: Add Tempering
In a small pan, heat ghee or oil. Add mustard seeds, red chillies, and curry leaves. Allow them to crackle. Pour this tempering over the rasam.

Step 6: Garnish & Serve
Turn off the flame, garnish with fresh coriander leaves, and serve hot.
