South Indian Chicken Biryani is a layered rice dish made with marinated chicken, spices, and basmati rice. It’s distinct for its robust flavors, use of fresh herbs, and a slightly spicy kick. 🛍️ Ingredients You'll Need

For Marinating the Chicken:

  • 500g chicken (washed & cut into medium pieces)
  • 1 cup thick curd (yogurt)
  • 1 tbsp ginger-garlic paste
  • ½ tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tsp garam masala
  • Salt to taste
  • Juice of ½ lemon

For Cooking the Rice:

  • 2 cups long-grain basmati rice
  • 1 bay leaf
  • 2 cloves
  • 2 green cardamom pods
  • 1 small cinnamon stick
  • Salt to taste

For the Biryani Base:

  • 2 medium onions (thinly sliced)
  • 2 tomatoes (chopped)
  • 2 green chillies (slit)
  • ¼ cup fresh mint leaves
  • ¼ cup coriander leaves
  • 2 tbsp ghee (clarified butter)
  • 2 tbsp oil
  • 1 tbsp biryani masala (store-bought or homemade)

👩‍🍳 Step-by-Step Instructions

🔹 Step 1: Marinate the Chicken

In a bowl, combine chicken with curd, turmeric, chilli powder, garam masala, ginger-garlic paste, lemon juice, and salt. Mix well and let it marinate for at least 1 hour (overnight for best results).

🔹 Step 2: Prep the Rice

Rinse the basmati rice until water runs clear. Soak it for 30 minutes. Meanwhile, bring water to a boil with bay leaf, cloves, cardamom, cinnamon, and salt. Add rice and cook till 70% done. Drain and set aside.

Heat oil and ghee in a thick-bottomed pot. Add sliced onions and sauté until golden brown. Stir in tomatoes, green chillies, mint, and coriander leaves. Cook until the tomatoes are soft.
