📝 What Is South Indian Chicken Biryani?
South Indian Chicken Biryani is a layered rice dish made with marinated chicken, spices, and basmati rice. It’s distinct for its robust flavors, use of fresh herbs, and a slightly spicy kick. Traditionally cooked using the dum method, it’s an all-time favorite across Tamil Nadu, Andhra Pradesh, Karnataka, and Kerala.

For Marinating the Chicken:
- 500g chicken (washed & cut into medium pieces)
- 1 cup thick curd (yogurt)
- 1 tbsp ginger-garlic paste
- ½ tsp turmeric powder
- 1 tsp red chilli powder
- 1 tsp garam masala
- Salt to taste
- Juice of ½ lemon
For Cooking the Rice:
- 2 cups long-grain basmati rice
- 1 bay leaf
- 2 cloves
- 2 green cardamom pods
- 1 small cinnamon stick
- Salt to taste
For the Biryani Base:
- 2 medium onions (thinly sliced)
- 2 tomatoes (chopped)
- 2 green chillies (slit)
- ¼ cup fresh mint leaves
- ¼ cup coriander leaves
- 2 tbsp ghee (clarified butter)
- 2 tbsp oil
- 1 tbsp biryani masala (store-bought or homemade)
👩🍳 Step-by-Step Instructions
🔹 Step 1: Marinate the Chicken
In a bowl, combine chicken with curd, turmeric, chilli powder, garam masala, ginger-garlic paste, lemon juice, and salt. Mix well and let it marinate for at least 1 hour (overnight for best results).
🔹 Step 2: Prep the Rice
Rinse the basmati rice until water runs clear. Soak it for 30 minutes. Meanwhile, bring water to a boil with bay leaf, cloves, cardamom, cinnamon, and salt. Add rice and cook till 70% done. Drain and set aside.
🔹 Step 3: Cook the Masala
Heat oil and ghee in a thick-bottomed pot. Add sliced onions and sauté until golden brown. Stir in tomatoes, green chillies, mint, and coriander leaves. Cook until the tomatoes are soft.
